Happy Tummy Chicken Noodle Soup

This soup is the brainchild of my big sister, Shemikah. She’s an aspiring naturopathic doctor, and always abreast with the latest trends in natural remedies. Aside from my parents, she is the one I go to when I’m not feeling well and need advice on how to fix it. Shemikah calls it her “Happy Cleanse Soup.” She say’s it is a “Happy Cleanse” because it is not only light but filling at the same time; and when you are trying to eat clean or recover from a bout of crappy eating, it helps your body get regular again while not straining the digestive system.

Don’t let her name of the soup fool you, it is by no means a “cleanse.” But this delicious take on chicken noodle soup does make you feel like you are being healthy AF. It is just a clean, fresh, broth-based soup that makes for the perfect light lunch or dinner. It is also great way to recover from a long weekend of eating crap (we’ve all been there, that time when a cheat meal on Friday turns into a cheat weekend). It is great to eat when you are feeling bloated and icky, and can’t bear the thought of eating something heavier than well…soup!

The recipe makes enough soup for at least six. I took it for lunch for a week straight. I carried it in my thermos, and ate it while I read for classes. It is lighter than a salad, and doesn’t bog you down on a long days when you have back to back classes or meetings. It fills you up without leaving you stuffed and gives you enough energy to carry you to dinner. The warm seasoned chicken broth coupled with the veggies, sausage and hearty chicken breast pieces make for a nice dish that can make you feel cozy anywhere.

Yield 6 servings

Ingredients

  • 2 32oz boxes Chicken Broth
  • 1/2 yellow/sweet onion (chopped)
  • 1/2 green bell pepper (chopped)
  • 1 cup sliced mushrooms (pre-sliced and then roughly chopped)
  • 1/2 tbs garlic (can be fresh or stir-in paste)
  • 1/2 tbs basil (can be fresh or stir-in paste)
  • 3 large chicken breast (butterflied and cubed)
  • 2 cups smoked sausage
  • 3 carrots (peeled and sliced)
  • 2 heads broccoli (cut into florets)
  • 1/2 bag egg noodles
  • avocado

Seasoning

  • Goya Adobo (all purpose - the one with the red cap)
  • black pepper 

Instructions

  • in large pot, on medium heat add olive oil 
  • sauté  onions, bell peppers, mushrooms, garlic and basil
  • add sausage and sauté until lightly browned 
  • add chicken breast. Season to your liking with adobo and pepper. cook until lightly browned.
  • add broth and stir
  • add carrots and broccoli
  • bring to a slow, rolling boil
  • add noodles and stir. Let noodles cook until al dente (about 5-7 min)
  • once noodles have cooked reduce heat, and let simmer on low heat. Put lid on pot. 
  • Serve with avocado slices seasoned with adobo (or plain if you prefer)
