Happy Tummy Chicken Noodle Soup

Ingredients
- 2 32oz boxes Chicken Broth
- 1/2 yellow/sweet onion (chopped)
- 1/2 green bell pepper (chopped)
- 1 cup sliced mushrooms (pre-sliced and then roughly chopped)
- 1/2 tbs garlic (can be fresh or stir-in paste)
- 1/2 tbs basil (can be fresh or stir-in paste)
- 3 large chicken breast (butterflied and cubed)
- 2 cups smoked sausage
- 3 carrots (peeled and sliced)
- 2 heads broccoli (cut into florets)
- 1/2 bag egg noodles
- avocado
Seasoning
- Goya Adobo (all purpose - the one with the red cap)
- black pepper
Instructions
- in large pot, on medium heat add olive oil
- sauté onions, bell peppers, mushrooms, garlic and basil
- add sausage and sauté until lightly browned
- add chicken breast. Season to your liking with adobo and pepper. cook until lightly browned.
- add broth and stir
- add carrots and broccoli
- bring to a slow, rolling boil
- add noodles and stir. Let noodles cook until al dente (about 5-7 min)
- once noodles have cooked reduce heat, and let simmer on low heat. Put lid on pot.
- Serve with avocado slices seasoned with adobo (or plain if you prefer)
